Professional chefs test their recipes over and over again for months before publishing them into cookbooks. They often also send them to test kitchens or home cooks to see if other people can understand how to put the recipes together.

When they don’t turn out well, the chef goes back and adjusts the instructions until they are foolproof and the recipe turns out well almost every time.
But many recipe sites and blogs contain tons of recipes that were put together by home cooks that don’t really understand how to write directions that anyone can follow.

Plus, most recipes online don’t break down the steps with video or more than a single photo. So, if you have no idea what a “pinch” looks like or how to “julienne” cut your carrots, you could spend hours just figuring out how to prep the ingredients.

and Even I Struggled With Paleo Cooking at First...
I’m Camille, the founder of Paleo Cooking School Basics, and the star of the Camille’s Paleo Kitchen TV show. 

I was working as a professional chef when I found out that I needed to go Paleo because of health issues.

The crazy thing is that, even though I had been cooking for a family full-time for YEARS, I struggled with how to make my own Paleo meals at home without it becoming another full-time job. 
When I was working as a private chef full-time, I had an unlimited food budget, a sous chef to prep my ingredients and do my grocery shopping, and a housekeeper to clean it all up.  Once that ended, I quickly learned that, in order to get my own meals onto the table for myself and family, things needed to change big time.

I actually had to re-learn how to cook to go Paleo. And then, I had to learn shortcuts to make it fast, easy and affordable. It was the only way for me to make it easy to get dinner on the table as a new mom who was also trying to run a business.

I immediately scrapped the 80% of my recipes that were tedious and time consuming to make. I focused on the ones that I could make ahead, freeze, and make with time-saving prep tools. I also eliminated all of the recipes that had expensive specialty ingredients.
